Blackberry Cream Cheese Wontons

Ingredients:

For the Blackberry Filling:
1 cup fresh blackberries
1/4 cup sugar
1 tablespoon lemon juice
1 tablespoon water
2 teaspoons cornstarch
For the Cream Cheese Filling:
8 ounces cream cheese, room temperature
¼ cup sugar
14-16 wonton wrappers
1 cup vegetable oil for frying
¼ cup powdered sugar, optional for dusting

Directions:

Blackberry Filling:
In a small saucepan, combine blackberries, lemon juice, and sugar. Heat over medium until a sauce begins to form, stirring frequently.
Mix cornstarch with water in a small bowl, then stir into the blackberry mixture until thickened. Remove from heat and let cool.
Cream Cheese Filling:
Beat cream cheese and sugar in a bowl until smooth.
Making the Wontons:
Place wonton wrappers on a clean surface. Spoon a small amount of cream cheese mixture followed by blackberry mixture onto each wrapper.
Moisten edges of wrappers with water, pull corners up and seal, ensuring most air is expelled.
Heat oil in a large frying pan over medium heat. Fry 5-6 wontons at a time until golden brown, about 4-5 minutes each side. Do not overcrowd the pan.
Drain on paper towels. Dust with powdered sugar if desired.
