Watermelon Mint Lemonade 🍉🍋

A refreshing and delicious summer drink that’s perfect for hot days.

Ingredients:
4 cups fresh watermelon juice
3/4 cup fresh lemon juice
3/4 cup water
1/2 cup sugar
6 thinly sliced fresh mint leaves
Instructions:
1️⃣ Make the Lemon Mint Simple Syrup:
Combine water, sugar, mint leaves, and one half of a lemon in a small saucepan. Bring to a boil, then simmer for 3-5 minutes until the sugar dissolves completely. Set aside to cool for about an hour. Once cooled, strain out the mint leaves.

2️⃣ Prepare the Watermelon Juice:
Use a seedless watermelon, cut into cubes. Puree the watermelon in a food processor or blender until smooth. Pour the puree through a fine sieve, pressing on the pulp with the back of a large spoon. Discard the pulp and repeat the process until you have about 4 cups of watermelon juice.

3️⃣ Juice the Lemons:
Juice 3-4 large lemons to yield about 3/4 cup of fresh lemon juice.

4️⃣ Mix the Lemonade:
In a pitcher, combine the watermelon juice, lemon juice, and the cooled simple syrup mixture. Add 5-6 large mint leaves to the pitcher for extra mint flavor. Stir well.

5️⃣ Serve:
Pour the lemonade over ice and garnish with a lemon slice and a mint leaf.
