Zucchini Tomato Bake


-brush zucchini with oil
-sprinkle with salt, pepper,garlic powder, Italian spice
-top with tomato and cheese
-bake till cheese is lightly browned
Other variations:
– sub portobello mushroom tops or eggplant for the zucchini
– sub roasted red peppers for the tomato
– sub pesto or chili oil, for the oil
– change up the cheese – feta, parmesan, swiss, cheddar, Monterey Jack.
– add bacon bits, chopped olives, basil leaves, chopped artichoke hearts, spinach (raw or blanched), capers, jalapeño, shrimp, pizza sauce, red pepper flakes, Alfredo sauce, slice of salami, diced ham, taco meat, pasta meat sauce, pulled pork, roasted veggies…
