Lemon Curd Cookies


2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup lemon curd

Preheat oven to 350°F (175°C).
In a bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, beat butter and sugar until light and fluffy. Beat in egg and vanilla.
Gradually add the flour mixture to the butter mixture, beating until just blended.
Drop dough by tablespoons onto a baking sheet, spacing them 2 inches apart.
Bake for 10-12 minutes or until edges are light golden brown.
Let cookies cool on the sheet for 2 minutes, then transfer to a wire rack.
Once cooled, spoon a small amount of lemon curd onto each cookie.
