Ingredients:
1 cup fresh cranberries
1/2 cup sugar
1/2 cup orange juice
1 tablespoon orange zest
1 cup mascarpone cheese
1 cup heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 package (7 ounces) ladyfingers
1/4 cup orange liqueur or orange juice
Additional fresh cranberries and orange zest for garnish
Directions:
In a small saucepan, combine cranberries, sugar, and orange juice. Cook over medium heat until the cranberries burst and the mixture thickens, about 10-15 minutes. Stir in orange zest. Let cool completely.
In a large bowl, beat mascarpone cheese, heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Quickly dip ladyfingers into orange liqueur or juice, and lay them in a single layer in the bottom of an 8-inch square dish.
Spread half of the mascarpone mixture over the ladyfingers. Spoon half of the cranberry mixture over the cheese layer.
Repeat layers once more, finishing with cranberry mixture.
Cover and refrigerate for at least 4 hours, or overnight.
Garnish with fresh cranberries and orange zest before serving.
